Ingredients

  • 2 large eggs
  • 140g honey
  • 3 medium bananas (170g)
  • 40g light brown sugar (optional)
  • 250g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • Pinch of nutmeg
  • 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 60g raisins
  • 30g chopped pecans
  • 50g chopped dark chocolate
  • 50ml milk
  • 65ml melted Vita Coco coconut oil
  • •150ml water
  • •1 tbsp. caster sugar
  • •1 tsp grated/chopped ginger

Method

  1. Preheat your oven at 165 fan. Grease & line a 9 inch loaf tin or round cake tin.
  2. Beat together the honey and eggs.
  3. Add the mashed banana and sugar. Continue to whisk.
  4. Add the flour, raising agents and spices. Mix all together to form a smooth mix.
  5. Fold in the raisins, nuts, Vita Coco coconut oil, milk and chocolate.
  6. Bake for 45-50 minutes.
  7. Make the syrup and allow to cool. When the cake is ready, pour the syrup onto the hot cake and leave the cake in the tin for 5 minutes before turning onto a wire rack.
  8. Bring all the syrup ingredients to a boil for 15mins or until it feels sticky to touch.
